A Fresh Take on Healthy Eating If you’re on the hunt for a nutritious, vibrant meal that’s as easy to prepare as it is delicious, look no further than the recipe featured here. This webpage, part of a collection of cookbook-inspired ideas, spotlights the “Triple Berry Quinoa Bowl,” a simple yet flavorful dish drawn from Costco Connection Magazine’s Farm to Table series. It’s perfect for anyone seeking a quick, plant-based option packed with antioxidants and wholesome ingredients.

The recipe starts with the basics: rinse 1/2 cup of quinoa and cook it in 3/4 cup of water or broth. Bring it to a boil, then simmer covered for 15 minutes before fluffing it with a fork. Divide the cooked quinoa into two bowls and top each with 1/2 cup each of fresh blueberries, blackberries, and raspberries—reserving the rest for a colorful arrangement. The real magic comes from the dressing: whisk together 3 tablespoons of extra-virgin olive oil, 1 tablespoon of balsamic vinegar, 1 teaspoon of Dijon mustard, and 1/2 a finely minced shallot. Drizzle it over the quinoa and berries for a tangy, savory contrast. For extra flair, optional toppings like feta crumbles and chopped pecans add a creamy, nutty crunch.

What makes this page stand out is its nod to culinary history. Beyond the main recipe, it teases “quick and easy recipes from an old cookbook made about fifty years ago from a rural community,” including gems like First Lady Betty Ford’s Strawberry Blitz Torte from around 1975 and a contribution from Vice President Nelson Rockefeller’s wife.
