🦐 Shrimp Scorpio (Greek)
Greek-style shrimp baked in a rich tomato-herb sauce topped with melted feta cheese. A flavorful Mediterranean classic.
Ingredients
- 3 tablespoons olive oil
- 2 cups chopped scallions or onions
- 1 clove garlic, minced
- ¼ cup chopped parsley
- 1 tablespoon fresh dill, finely chopped (optional)
- ⅛ teaspoon dry mustard
- ¼ teaspoon sugar
- 2 cups chopped tomatoes (fresh or canned)
- ½ cup tomato sauce
- 1 lb raw shrimp, peeled and deveined
- ½ cup feta cheese, crumbled
Instructions
- Preheat oven to 425°F.
- Heat olive oil in a saucepan. Lightly brown the onions.
- Add garlic, parsley, dill (if using), dry mustard, and sugar. Stir well.
- Add chopped tomatoes and tomato sauce. Simmer for 30 minutes.
- Add peeled and deveined shrimp to the sauce and cook briefly, just until they begin to turn pink.
- Pour the mixture into a 1½-quart casserole dish. Sprinkle evenly with crumbled feta cheese.
- Bake for 10–15 minutes, until the cheese is melted and bubbly. Serve immediately.
